FYI: Honey is pure, raw, all natural sweetener prepared by bees from nectar collected from wild and cultivated flowers. Honey varies in color and taste, due to the fact that honey bees get their nectar from many different floral.
Early spring, our honey is a clear, light color, and has a light, sweet flavor to it because the bees are foraging on maple trees, clover patches and blackberries.
As the summer goes on, there are many more florals starting to bloom such as dandelions, poison oak and spearmint; just to name few. Later in the season, the honey will be more of a light and dark amber color, which also means a stronger flavored honey.
Did you know that our honey is local if you live with in a 50 mile radius of the Coquille River Valley.
You may find your honey has crystallized after being stored for a long period of time, or in a cold room. Not a problem. Honey never goes bad, unless contacted with water. To remedy the crystallization: place in warm sunshine or a warm water bath (not over 130 degrees F). This will bring it back to its normal liquid state.
